WIP — Work in Progress — The Best Dining Experience in Copenhagen

One of Copenhagen’s top treasures and must-try experiences is WIP –a Work In Progress! This is for the adventurous foodie type with an appreciation for guided experiences.

This is a 4 course meal selected by the chef, with each one paired with a glass of wine, and all are tapas style. The portions are just enough to leave you feeling satisfied while still wanting more.

This place is on a mission to test at least 50 courses during 100 days. Which means YOU get to help and decide the future menu of this Mediterranean style tapas restaurant. A constant work in progress.

I enjoyed dishes here I never thought would pair well together and ate ingredients I never thought I’d like — Bravo WIP! All this because of their style of serving.

I’m not normally an anchovy eater, but this place presented it in a unique way I loved. For their 1st dish — a bonus to the courses —  the combination with the olive created a nice flavor where the fish taste was neutralized and the meat was tender and delicious.

Mushroom and chicken fried ball – full of flavor. Chicken and mushroom works beautifully together and the crunchy texture of the fried shell ties it together.

The atmosphere is romantic and urban cool, Jeff and I enjoyed sitting upstairs so we had a nice view of the street, Sankt Peders Stræde.

The dining concept at “WIP” is really simple. You can always get a four course dinner + four glasses of wine + water & coffee for DKK 400 (about $60).

After your meal, you receive a cork in which you drop in one of four jars to vote — each jar representing a course. This helps them on deciding the future of their menu.

We started the experience with Rose champagne — always a great way to start a meal — refreshing and fruity!

The first main dish was unlike anything I’ve ever eaten. White asparagus, a medley of nuts, with olives and anchovies that are tied together with a paprika purée.

It’s like having the special recommended by the chef every time and I love it! One of our favorite courses was the Hyke fish with chopped chorizo — the 2nd course –the chorizo gave it a rich flavor. The fish is almost buttery and melts together with the purée and chorizo.

This combo isn’t something I’d find appealing to order BUT IT’S SO GOOD I’D LICK THE PLATE IF PEOPLE WEREN’T WATCHING so instead, I dragged my bread ball through the purée.

The final dish was ham’s neck — tender, flavorful, and savory. I think this was my first time eating ham’s neck and I enjoyed the combination with the foam and vegetables and it was paired with a robust red wine.

After the final plate, we enjoyed an amazing dessert — a cool sorbet with a delicate white chocolate mousse and fresh berries. Add a bit of espresso and we had an outstanding meal!
