Maroon Sausage: The King of Jerk Chicken Sausage

Lately, I’ve been in that summer haze where I just want to be back in the Caribbean, more precisely, back to Curaçao where I’m lounging on the beach with an Amstel Bright and a Caribbean soul kick dish! That’s what was going through my head when I tried Maroon Sausage, the best chicken sausage I’ve come across — authentic jerk chicken ground up into a sausage made with the most flavorful ingredients.

Anyone who knows me — knows I love food with a passion for flavor and authenticity. When I came across Howard Allen, founder of Maroon Sausage, and his specialty crafted chicken sausage ingredients I was in awe — he puts a special touch of flavor to his brand by keeping true to its origins and family recipes. These will have you coming back for more!

More than that, Howard has a passion for life! When I asked him what his motto was he went on to explain:

I find myself telling people to ‘Keep it Spicy’ and when I say that, I mean more than just food. Life should be interesting/spicy/fun. When people walk away from the pop-up booth (at Smorgasburg) I want them to feel like they just walked through a backyard bbq somewhere in Flatbush if not Jamaica itself. The music, smell and attitudes of the staff should be embracing and positive. I’m trying to create a vibe. Sometimes people nearby sway to the music.

Often times people will taste the sausage and launch into a story about their travels in the Caribbean. One day it rained and a few guys came into the booth from Kingston and they stopped for a moment and said this sounds like what we play at home. Then they looked around at the booth and read the name of the company. They were slightly confused. Then they asked who was the Maroon? They wanted to know how I was able to create such an authentic experience and not be from Jamaica.

And that’s exactly what Jeff and I did when we came across Howard’s friendly booth at the Creeds Collective summer beach house. Howard welcomed us with a great vibe, hot delicious food, and some Caribbean flavor!
