BEET Burgers Even Your Carnivorous Friends Will Love
hey doosts, it’s A here! as we reminisce about our memorial day weekend freedom, i thought to myself…and maybe out loud to the cat once or twice…”what better way to welcome the new work week than to rub my awesome weekend chock full of BBQ-ing in your faces?!” so you’re probably all asking yourselves how my holiday beat out yours, right? well the answer is simple…while you were all leaving your dignity at the hotel in sin city, turning into a crunchy, tree hugging hippy upstate, or getting your bouge on in the hamptons, i stuck with the three essential b’s of MDW: brooklyn, beer, and BURGERS. now for those of you who actually know me (or have been following my insta account), know i classify myself as a pescetarian…with commitment issues (aka i shamelessly enjoy a cheat day every once in a while).
in preparing to try and control myself this weekend…with my food choices at least…i decided to whip up a pre-pilates batch of beet burgers to bring along to the BBQ festivities. now usually i get my cooking inspiration from two places: 1. from images i see on pinterest, in magazines, or just simply on tv, ooor 2. by just looking in the fridge and throwing a bunch of nearly bad veggies together (#2 being the majority of times). veggie burgers, however, are not really my forte, and i decided it’d be best to actually take that extra step on pinterest and click for the recipe for once. and voila, this amazingly tasty and simple recipe for beet burgers appeared…weird how that works, huh? with that said, i present to you my first attempt at making the green kitchen stories’ grilled beet burgers…and it was a pretty killer first attempt if i do say so myself. bon appetite betches!

BEET-gers
(makes 6-8 servings)
3 cups peeled and grated raw beets (about 3 large beets)
3/4 of a small white onion grated
2 cloves finely chopped (or grated) garlic
1 1/2 cups rolled oats
2 eggs
2 tbs evoo
1/3 cup firm tofu (or feta) crumbled
handful of fresh basil (julienned)
s/p to taste
step 1: grate it up
step 2: mix main ingredients (oats, beets, onion, garlic, oil, and eggs)
step 3: add seasoning (basil, salt, pepper and tofu or feta)
step 4: patty up!
step 5: enjoy (preferably with some melted provolone, avocado slices, and mustard)
side note: when grilling, i HIGHLY recommend placing the patties on tin foil…otherwise you’re going to be feeding the fire with the majority of your burger, rather than your mouth…live and learn!
